We kicked off the #BetterPlanet day at Propelify with Noom’s very own, Chef Sam Pride. He showed the Propelify community how to make his Veggie Bake & Coconute Rice – missed it? Catch the full recipe below!
Ingredients
Veggie Bake:
1 Lb pressed tofu
1 roasted honey nut squash
4-5 sugar turnips thick slices
3 heirloom eggplant large dice
1 yellow onion large dice
Grated ginger to taste
Salt, pepper, garlic powder, to taste
¼ c teriyaki
1-2 tbl walnut oil
Crushed red pepper
1ts garlic powder
Coconut Rice:
1 part water
1 part coconut milk
1 part basmati rice
1 bunch cilantro
Ginger to taste
Pinch of sugar
Salt to taste
Method
Vegetables: Press tofu and add red pepper flake and teriyaki, mix in all other ingredients. Spread on a sheet pan and place in a preheated (about 400)oven and roast until browned, turning once (about 20 min.).
Rice: Bring water and coconut milk to a boil, add rice sugar and salt, reduce heat and simmer for 20 min. Add cilantro and ginger. Fluff rice.
Serve family style with rice on bottom and veg on top, and garnish with any remaining cilantro.
